Beta-carotene
Beta-carotene is a type of carotenoid found in plant sources, such as carrots, that gives them their characteristic orange color. It is a precursor to vitamin A (retinol), which means that the body can convert it into vitamin A as needed. This makes it a safe source of vitamin A, as the body only converts what it requires. Vitamin A is important for the normal reproduction of cells (cellular differentiation), as well as good vision and the proper development of an embryo and fetus. Beta-carotene also functions as an antioxidant, protecting the body from damaging free radicals. Other sources of beta-carotene include tomatoes, spinach, lettuce, sweet potatoes, squash, and broccoli.
